History
Champagne Salon was founded by Eugène-Aimé Salon. He bought his first vineyard, Le Jardin Salon, which
covered just a single hectare, in 1905. The vineyard is located in Mesnil-Sur-Oger in the Côte des Blancs
region. Since the first vintage in 1905, there have only ever been 37 vintages produced. Unlike many other
luxury-cuvée Champagnes, Salon is only made in what are considered the most outstanding years. (read more)
The key message of Salon is that it is singular. It was created by
one man, using a single grape variety, from a single region, in a single year, resulting in a single great Champagne
- Salon’s Cuvée S. The Chardonnay grapes all come from Grand Cru vineyards in Le Mesnil-Sur-Oger in the Côte des Blancs.
Today, Laurent-Perrier, a family-owned company, is the majority shareholder of Champagne Salon. Champagne Delamotte
is its sister house and both houses are run by Didier Depond.
Viticulture and Vinification
The fruit used to produce Salon comes from Le Jardin Salon vineyard as well as 19 other parcels in Le Mesnil-sur-Oger.
Each year, as is stipulated in the Champagne appellation regulations, the harvest is hand-picked. Due to the extreme
quality level that is expected of Salon, this is done with special care. The fruit is then transported to the winery
and although fermentation was once performed in oak foudres, it is now carried out in stainless steel tanks.
Post-fermentation, Champagne Salon goes through an extended period of lees ageing, for an average of 10 years, which
contributes to both the wine’s great complexity and its ability to age.
